Spicy Hash Brown Breakfast Casserole
1 medium rutabaga (microwave for 3 minutes, cool, peel skin, and slice into small pieces)
1 medium turnip (microwave for 2 minutes, cool, peel skin, and slice into small pieces)
2 Tablespoons melted butter
2 Tablespoons olive oil
½ teaspoon coconut oil
1 teaspoon sea salt
3 eggs (beaten)
½ cup whipping cream or half and half
1 cube chicken bouillon or packet
1 Tablespoon crushed garlic
1 Tablespoon garlic powder
1 teaspoon onion powder
1 chive (chopped finely)
½ teaspoon black pepper
1 teaspoon chili powder
½ teaspoon cumin
1 teaspoon tabasco sauce
½ teaspoon smoked paprika
½ cup shredded pepper jack cheese
½ sharp cheddar cheese
1 Andouille sausage (pre-cooked, sliced into ½ inch pieces)
2 slices of deli ham (or turkey ham) in ¼ inch cubes
Preheat oven to 400 degrees.
1) Beat eggs.
2) Microwave rutabaga and turnip as above, cool, slice into julienne sized pieces and add to mixing bowl with eggs.
3) Add remaining ingredients to bowl and mix well.
4)Add to baking dish and cook for 30 minutes on 400 degrees.
Serves 10-12.
