Cheese and Jalepeño Chicken Bake
Preheat oven to 375 degrees.
Chicken base ingredients:
2 large chicken breasts (cut into bite sized pieces)
1 Tablespoon olive oil
1 Tablespoon coconut oil
1 green onion (diced)
3 slices cooked, crispy turkey bacon- diced
1 teaspoon sea salt
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 teaspoon black pepper
4 ounces water
-Heat oils in large skillet.
-Add above ingredients and cook until chicken is done.
-Turn down heat to simmer.
Cheese sauce:
3 Tablespoons cream cheese
1 Tablespoon unsweetened, plain Greek yogurt
1 teaspoon Tabasco sauce
4 ounce can green chilies (or jalepeños)
1 Tablespoon Adobo seasoning (salt and pepper)
1 Tablespoon Mexican blend shredded cheese (or cheddar)
1 teaspoon chili powder
-Combine in bowl and mix well.
-Set aside.
Topping:
1 Tablespoon melted butter
½ cup crushed spicy pork rinds
¼ cup Mexican blend shredded cheese (or cheddar)
-Melt butter in small bowl.
-Add previously crushed pork rinds (in food processor or Magic Bullet for more meal texture).
-Add cheese.
-Combine well.
Layering prepared ingredients:
-Place chicken mixture in bottom of baking dish.
-Spread cheese sauce evenly over chicken mixture.
-Top with pork rind mixture.
-Bake uncovered in preheated oven at 375 degrees for 15-20 minutes or until crust browns.
